1 T. cornstarch
2 T. cold water
1/2 c. boiling water
3 egg whites
6 T. sugar
dash salt
1 t. vanilla

Directions:
Directions:
Blend cold water and cornstarch in sauce pan. Add boiling water and cook, stirring until clear and thickened. Let stand until completely cold. With mixer at high speed, beat egg whites until foamy. Gradually add sugar and beat until stiff but not dry. Turn mixer to low speed and add salt and vanilla. Gradually beat in cold cornstarch mixture. Turn mixer again to high speed and beat well. Add to pir. Bake @ 350 for about 10 minutes.

Mrs. Lula lived across the road from my family when I was growing up and everything she made was so good. Robert sure approves of it on top of his coconut pies!
