Ingredients:  
3 c. chicken stock
3/4 c. finely chopped carrots
1/2 c. butter or margarine
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/4 c. flour
1/4 tsp salt
paprika
2 c. milk
1/2 lb grated sharp cheddar cheese
1 Tbsp mustard

Directions:
Directions:
Simmer carrots in broth until tender. Meanwhile in large sauce pan saute onion and celery in butter until tender and golden, remove from heat and stir in flour, salt, paprika and milk. Bring to a boil stirring constantly until thickened and very smooth. Stir in chicken broth, carrots, grated cheese and mustard. Heat until cheese is melted. Serve very hot with chopped parsley on top.
