1 6oz. pkg. Uncle Ben's© Long Grain & Wild Rice
1/4 cup butter or margarine
1/3 cup chopped onion
1/3 cup flour
1 tsp. salt
dash of black pepper
1 cup half&half
1 cup chicken broth
2 cups cubed cooked chicken
1/3 cup chopped pimento
1/3 cup chopped parsley
1/4 cup chopped almonds

Prepare contents of rice and seasoning packets according to package directions. Meanwhile, melt butter in large saucepan. Add onion and cook over low heat until tender. Stir in flour, salt and pepper. Gradually stir in half & half and chicken broth. Cook, stirring constantly, until thickened. Stir in chicken, pimiento, parsley, almonds and cooked rice. Place in 2-qt casserole. Bake, uncovered, in 425ºF oven for 30 minutes.

This is a recipe I enjoyed making when I was a teenager. It didn't occur to me that Uncle Ben© wouldn't always print the recipe on the box of Long Grain and Wild Rice. So, after many years of wishing I had written it down, I just found it in a cookbook entitled, "Best Recipes from the backs of Boxes, Bottles, Cans and Jars"
