6 T butter
6 cups chopped onion
1 T chile powder
2 T cumin
2 heads cauliflower, chopped
1 potato diced
6 C vegetable stock
1 t salt
1/2 t pepper
tomato, cilantro, avocado, and grated cheese for garnish

Directions:
Directions:
Saute onion in butter, add spices. Add cauliflower, potato, and stock, Cook 25 minutes. Season with salt and pepper. Puree. Serve with garnish.
