3 Tablespoons Butter
2 Tablespoons Flour
1-1/2 Teaspoons Salt
1/8 Teaspoon Pepper
3 Cups Milk
6 Medium Potatoes, pealed and thinly sliced
2 Tablespoons Chopped Onion

Directions:
Directions:
Preheat oven to 350º.

Make white sauce of first 5 ingredients. Place half the potatoes in a greased 2-quart casserole; add half the onion and half the sauce. Repeat layers. Cover and bake for 1 hour. Uncover and bake 30 minutes longer. Serves 4 to 6.

You can also add 3 cups cubed, cooked ham and call it Ham Potato Bake.
