3 c. frozen corn
3-4 T. butter
1 onion, diced
2 T. butter
1 T. garlic, minced
2 c. white wine
2 qts. chicken stock
2 T. chicken base
2 c. half and half

Sour Cream Sauce:
1 c. sour cream
2 tsp. lime juice
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. chipotle seasoning

In frypan fry corn in butter until it starts to brown (about 20-25 minutes or so). Meanwhile, in dutch oven saute onion in butter. Add garlic and wine. (Doni uses Chardonnay-one bottle makes 2 recipes and costs $5-7...send your hubby to buy it :) Simmer about 20 minutes until wine cooks down and the mixture becomes pasty. Add chicken stock and chicken base. Stir and simmer few minutes. Stir in half and half and fried corn. Heat through. Thicken with corn starch if needed. Serve with a dalop of sour cream sauce.

Sour Cream Sauce: combine ingredients and set aside.
