2/3 cup sugar
3 tbsp cornstarch
1/2 tsp salt
3 cups milk
3 egg yolks slightly beaten
1 tbsp butter
1 1/2 tsp vanilla
Bananas - 1 bunch sliced
9 inch pie shell
sweetened whipped cream

Mix in saucepan: 2/3 cup sugar, 3 tbsp cornstarch, 1/2 tsp salt, then stir in gradually 3 cups milk. Cook over med. heat, stirring constantly, until mixture thickens and boils Boil 1 min. Remove from heat. Gradually stir at least half of hot mixture into 3 egg yolks slightly beaten. Then blend into hot mixture in saucepan. Boil 1 min. more, stirring constantly. Remove from heat.
Blend in 1 tbsp butter and 1 1/2 tsp vanilla.
Cool filling. Arrange a layer of sliced bananas 1.2 inch deep in baked 9 inch pie shell before pouring in cooled filling.
Top with sweetened whipped cream.
