3/4 cup butter
3/4 cup all purpose flour
4 cups chicken broth
1 cup half and half
1 cup heavy cream
3 egg yolks, beaten
1 to 2 tbsp diced red pepper pimento
1 1/2 cups fresh mushrooms, sliced
1/2 cup green pepper, diced
2 cups cooked chicken, coarsely diced
2 tbsp sherry
salt and pepper to taste
1/2 tbsp paprika

Melt butter, add flour and cook one minute to make a roux. Add warmed chicken broth, half and half, cream and sherry. Heat together while stirring until hot but not boiling. Remove from heat and slowly add beaten egg yolks. Cook until slightly thickened. In a small amount of butter, saute together diced red pepper, mushrooms, green peppers. Then add with chicken to the sauce. Salt and pepper to taste, and add paprika. Serve over puff pastries or biscuits.
