3 tbsp. butter
1 cup sugar
3 eggs separated (you will need both the whites and the yolks)
juice and rind of 1 lemon
3 tbsp. flour
1 cup undiluted evaporated milk

Directions:
Directions:
Cream the butter with the sugar and the egg yolks. Add the lemon juice and the rind. Add the flour and the evaporated milk. Lastly, fold in the two egg whites, stiffly beaten. Bake in a moderate oven (about 350º ) until brown, about 35 minutes.

This was Josephine's signature pie. She made it all the time. Once, she made it for family friends and forgot the sugar!! They teased her about it for years.
