2 1/4 c. sliced carrots (or baby)
1/3 c. crushed buttery crackers
2 tbsp margarine, melted
1/4 c. onion, chopped
2 tbsp flour
1/4 tsp salt
1/8 tsp pepper
3/4 c. milk
1/3 c. shredded cheddar cheese

Directions:
Preheat oven to 350º. Place carrots in a steamer over 1 inch of boiling water. Cook until tender but still firm, about 6-10 minutes. Drain. In a small bowl combine crackers and 1 tbsp margarine. In a medium skillet over low heat, saute onions in remaining margarin until tender. Stir in flour, salt and pepper. Cook for a few minutes, gradually pour in milk and stir constantly. Once thickened add cheese and fold to melt. Add carrots. Pour into a baking dish and sprinkle crumb mixture on top. Bake for 20 minutes.
