1 package dry yeast
1/4 cup warm water
1 cup milk, scalded
3/4 cup mashed potatoes
1/4 cup sugar
1/4 cup shortening
1 teaspoon salt
2 eggs
6 cups flour

Glaze:
3 cups confectioner's sugar
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup boiling water

Directions:
Directions:
1. Dissolve yeast in warm water.

2. Combine milk, shortening, sugar and salt. Cool until lukewarm. Stir in potatoes and eggs.

3. Gradually add enough flour to make a soft dough. Turn onto a floured surface and knead until smooth and satiny.

4. Place in lightly greased bowl. Turn dough over to grease top. Cover and let raise in warm place until doubled (1 to 1/2 hours)

5. Roll out to 1/2" thick. Cut out doughnuts and let rise until doubled.

6. Heat oil to 375 degrees. Fry in oil until brown, turning when they rise to the top. Drain on brown paper bag. Glaze while still warm.

7. Glaze: Mix confectioner's sugar, salt, vanilla and boiling water. Glaze donuts while still warm. Cool on another brown paper bag.
