2 boneless skinless chicken breast
Phyllo pastry (room temp.)
2 tbsp.Feta cheese
1 tbsp. basil pesto sauce
2 tbsp. diced black olives (optional)
1 tomato (finely chopped)
10 fresh basil leaves (finely chopped)

Directions:
Directions:
Pat chicken dry and season with salt and pepper.
In a bowl, mix Feta cheese, chopped basil with pesto sauce.

Make a horizontal cut in chicken creating a pocket.
Fill each chicken with Feta mixture.

Wrap each breast in Phyllo dough and bake at 350º for 25
minutes.

Serve with olives and tomato.

Note: I like to wrap the stuffed chicken with 2 layers of Phyllo.
After carefully adding Pesto to top layer in order to help Phyllo
stick; I add thinly sliced Phyllo strips to layer over the top
wrapped layer for a "Haystack" effect.
