1 pkg. of yellow cake mix
1 lb. butter, softened
4 1/2 c. flour
3 T. cinnamon
1 3/4 c. sugar
3 T. vanilla
confectioners' sugar for dusting

Directions:
Directions:
Make cake according to directions. Spray two 9-inch pans with non stick spray. Bake at 350º for 20 minutes. Meanwhile, mix together the butter, flour, sugar, cinnamon, and vanilla until sticky. Pull the cakes from the oven and break the cinnamon mixture into small pieces, scattering over the partially baked cakes. Bake an additional 20 to 30 minutes. (Be sure to test because you may need to bake a bit longer.) Let cool. Dust with confectioners' sugar.

I have always loved New York crumb cake - the more crumb the better. I found this recipe online and it is perfect with a morning cup of coffee. I made them for my neighbors at Christmas - and got rave reviews. (I used disposable cake tins so that I could give them away.)
