Sauce:
2 (6 oz.) cans tomato paste
1 c. water
3 tsp. leaf oregano
1 1/2 tsp. sugar
1 tsp. freshly ground black pepper
1 tsp. garlic powder or 1/2 clove freshly minced garlic

Crust:
2 c. warm water
1 tbsp. sugar
1 tbsp. or one packet yeast
1 tbsp. salt
5 - 6 c. all purpose flour
1 tbsp. olive oil

Mix all sauce ingredients and set aside. Can be made well in advance and kept in refrigerator which actually helps the flavors meld.

For crust, mix in this order: 2 c. warm water, dissolve sugar, then yeast, then salt. Mix with 5 c. flour and tbsp. olive oil and knead, adding up to one more cup of flour if the dough is too sticky. I usually end up at about 5 1/2 cups. Put dough in a greased bowl and cover with plastic wrap and a dish towel. Let rise until doubled in size.

Roll out dough to desired thickness and top as desired. We prefer thin crust on a pizza stone. If you use a stone, put it in the oven well in advance of the time you want to cook the pizza -- 30-60 minutes. The time it takes to preheat the oven is not sufficient to preheat the stone.

Bake at 450º F.

I really prefer King Arthur Flour. It costs about twice as much but it's worth it -- it even feels different to the touch.
