6 apples, pared, cored, sliced
2 1/3 c. sugar
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
3 c. flour
3 tsp. baking powder
1 tsp. salt
1 c. vegetable oil
4 eggs
1/4 c. orange juice
1 tbsp. real vanilla extract

Directions:

1. Preheat oven to 325º. In a large bowl, combine 6 cups of apples, one-third cup of the sugar, cinnamon, and nutmeg. Set aside.
2. In a separate bowl, mix together the flour, the remaining 2 cups of sugar, the baking powder and the salt. Make a well in the center of the mixture and add oil, eggs, orange juice, and vanilla. Beat with a mixing spoon until the batter is thick and blended well.
3. Spoon the batter into a well-greased bundt pan, alternately layering the batter with the apples, ending with the batter on top.
4 Bake for 1 hour, 15 minutes. Cool and glaze if desired.
