1 whole chicken
4 carrots
4 stalks celery
2 tbsps. tomato sauce or crushed tomatos
1 tbsp. salt
1/2 onion
1/2 handful of Parmesan cheese

Directions:
Directions:
Wash chicken and remove the insides. Place chicken in pan and fill to the top. Bring to a boil and add 1 tablespoon of salt. Let boil at low boil for 10-15 minutes. Add chopped celery, carrots, and onion and 1/2 handful of grated cheese. Cover pot half way and let simmer for a 1/2 hour. Add 1-2 tablespoons of tomato sauce for desired coloring. After about 2 hours, remove vegetables and smash through hand strainer. Cook at a simmer for as long as possible. Remove all chicken and chicken skin, especially the bones!
