1 large block of cream cheese (can be regular, reduced fat, or fat free), softened
1 container of Cool Whip (or generic frozen whipped topping), thawed
1 Graham cracker crust (make it yourself or ready-made)
1 package of Equal, Sweet & Low, or a teaspoon of sugar
1 teaspoon of lemon juice

Directions:

Whip cream cheese, Cool Whip, sweetener and lemon juice til smooth. Spread in pie crust, chill until mixture firms up enough to cut.

You can vary the recipe by changing the lemon juice to lime juice, or omitting the juice and adding a couple of tablespoons of unsweetened cocoa to create a chocolate pie (great in a chocolate cookie crust).
If you don't want to use a pie crust, serve in custard cups as a "mousse."
