For the crust:
1 c. margarine or butter
1/2 c. powdered sugar
2 cups flour


For the bars:
6 eggs
3 cups sugar
6 Tbsp flour
1/2 cup lemon juice (fresh or bottled)
grated rind of a lemon...optional

Directions:
Directions:
Cut butter/powdered sugar/flour as a pastry or mix with a mixer or in a cuisinart. Pat mixture into a 9x13 cake pan and bake 20 minutes at 350*.

Blend eggs, sugar, flour, lemon juice and rind.
Spread over baked crust and bake 45 minutes more at 350*.
Dust with powdered sugar if desired

A plate of lemon bars accompanied by a plate of chocolate chip cookies is one of the "Stewart staples" when feeding teens, hosting a casual dinner party or taking finger desserts to a gathering. These bars appear every February 22 for Leigh's birthday treat to take to school. The recipe came from Mrs. Whyte at Barb's recipe shower over 25 years ago and is now a family favorite of ours.
