3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger (optional)
1/2 tsp. nutmeg (optional)
1/2 tsp. salt

Filling
6 oz. cream cheese
4 tbsp. margarine
1/2 tsp. vanilla
1 c. powdered sugar
Directions:
Directions:
Mix everything together (except Filling portion). Spread evenly on cookie sheet that has been greased and lined with wax paper. Bake at 375 degrees for 15 minutes. Turn out on towel sprinkled with powdered sugar. Starting at the small end, roll towel and cake together and let cool. Unroll and spread with filling mixture and then, roll cake again and chill. Slice before serving.
