1 cup of Sugar
1 Large can of Libby's Pumpkin
3/4 cup Flour
1 tsp Baking Soda
1 tsp cinnamon

Filling:
1 8 oz soft cream cheese
1 cup powdered sugar
1 tsp vanilla
1/2 stick butter
Directions:
Directions:
For the Roll:
Mix the eggs, 1 cup of sugar and blend then add 3/4 cup of flour, 1 tsp baking soda and 1 tsp of cinnamon-Then spray cookie sheet with Pam and line with wax paper, then spray the wax paper with Pam. Then spread the mixture on the wax paper and bake for 15 minutes at 400º. Remove from the oven and take a cotton towel sprinkled with powdered sugar and dump the cake on the towel. Then roll into a log with towel and refrigerate for at least 1 hour.
Next make the Filling:
Mix the cream cheese powdered sugar, vanilla and the 1/2 stick of butter until it is smooth then unroll the log and take the filling mixtures and spread of the cake and re-roll into a log. Then wrap in wax paper, then foil and refrigerate until ready to serve. Slice and put on a serving platter and enjoy... Great for Thanksgiving and Christmas time...
