2 tbsp. butter
4 c. sliced leeks
1 medium onion, finely chopped
3 c. diced potatoes
4 c. chicken broth (Swanson chicken seasoned with garlic)
chopped ham, or small pieces of cooked bacon (optional)
1 1/2 c. milk
salt and pepper

In a 5 qt. casserole, melt butter for 1 minute in microwave at 50% power. Add leeks, onions and potatoes. Stir well - coating vegetables with butter. Cover and microwave on high for 15 minutes or until tender. Transfer to a stock pot, and add chicken broth, and stir well. Remove 2 cups of mixture and puree in blender until smooth. Return puree to mixture. If you want to add the ham or bacon, you could do that now. Heat for 10 minutes or until simmering gently. Add milk and spices. Heat until steamy hot. Do not overcook after adding milk
