2 Cups Sugar
1/2 Cup Margarine
2 Eggs
4 Cups shredded unpeeled apples
2 Cups Flour
2 tsp. Soda
2 Tsp Cinnamon
1 tsp Nutmeg
1/2 tsp. salt
1/2 chopped walnuts or pecans

~ Icing ~
1 1/2 cups sugar
1 Tlb. Butter
1 Cup Boiling Water
1/8 tsp. salt
1/2 tsp. Vanilla

Directions:
Directions:
Cake: Beat sugar, margarine, eggs until fluffy. Add apples. Mix together flour, soda, cinnamon, nutmeg and salt. Sift dry ingredients into apple mixture. Fold in nuts. Bake at 350 degrees for 45 minutes.
Icing: Caramalize sugar. Stir in boiling water until dissolved. Remove from heat and add butter, salt and Vanilla. Put icing on cooled cake.
