5 pounds of "good, white" potatoes. (How does one know if they have been good, I wonder....)
French Dressing (which consists of)
2/3 cup Olive Oil (or good corn oil)
1/3 cup Cider Vinegar
1 t. salt
1/2 t. paprika
Chopped chives
OPTIONAL:
Diced Eggs
Sliced Radishes and/or
Chopped Fresh Parsley

Directions:
Directions:
Boil potatoes in salted water until just fork tender.
Removed from water and drain on paper toweling. Cool. When they are cool, skin the potatoes and diced them into a large bowl. Marinate them for several hours in the French Dressing for several hours in the fridge, "stirring gently occasionally." Add the chives. Feel free to add the optional ingredients.
