Rope Sausage Recipe

3 tbsp olive oil
3 cloves garlic (chopped)
3 bay leaves
2 tbsp dried oregano
* salt and pepper to taste
1 cup white wine
2 cups home made tomato sauce (see index)
2 large red bell peppers (chopped)
1 large onion (chopped)
3 lb Hot rope sausage (left in rope shape)
*grated cheese to taste

1. Heat oil in large frying pan on med heat. Place sausage in spiral position to oil, brown on one side for 3-5 min

2. Turn and punch several holes in skin on cooked side of sausage.

3. Add wine and cook for 5-7 min more.

4. Drain 1/2 of the wine and return to heat. Bring tomato sauce to a simmer.

5. Add bay leaves,oregano,onion,garlic,peppers and salt and pepper to taste.

6. Simmer for 1 hour

7. Place on large platter top with grated cheese
