4 tbsp x-virgin olive oil
4 cloves garlic (minced)
3 bay leaves
* salt and pepper to taste
1 tbsp Italian seasoning
1 tbsp thyme
1 28 oz can whole tomatoes (hand crushed)
1 gal home made turkey stock (see index)
1 large onion (diced)
1 bunch broccoli rabe (chopped coarsely) remove stems
1 lb bag brown lentils
1/4 lb pancetta (cubed)
3 lb hot sausage (skin removed) and browned in olive oil and grated cheese to taste

1. Heat oil and brown pancetta

2.Add garlic, onion,bay leaves,salt,pepper,Italian seasoning and thyme. Cook stirring for 3 min

3. Add tomatoes and lentils and simmer for 5 min

4. Add hot turkey stock and browned sausage simmer for 4 min on med heat

5. Add Broccoli and simmer for 5 more min

6. Top each bowl with grated cheese
