2 eggs
1 cup milk
1 cup brown sugar
2 tbs butter, softened
1/4 cup self rising flour
1 tsp vanilla
3 1/2 oz canned coconut
Directions:
Directions:
Beat eggs with a mixer. Blend in remaining ingredients and pour into a greased 9" deep dish pie plate. Bake or 35-40 minutes in a 350 degree oven. Best if made a day ahead.

You can also add 1/2 cup of chocolate chips before baking.
