6 tablespoons cornstarch
2 tablespoons butter
1 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 bananas
2 1/4 cups milk
1 baked pie crust
3/4 cup half and half
1 cup whipping cream
3 egg yolks
sugar, to taste
Directions:
Directions:
Combine the cornstarch, sugar and salt in a saucepan. Add the milk and half and half and cook over medium heat until smooth and thick, stirring constantly. Beat the egg yolks. Pour about 1/2 cup of the hot mixture in the egg yolks and mix together before pouring them into the saucepan. Cook 2 to 3 minutes and remove from heat. Add the butter and vanilla and cool the mixture. Slice 2 bananas into a baked pie shell. Pour in the cool filling and refrigerate 3-4 hours. Whip the cream and sweeten it to taste. Put it on top the pie about 30 minutes before serving. Makes 1 pie.

Variation: Coconut Cream Pie - omit bananas and add 1-1 1/2 cups coconut. Top with toasted coconut.
