1lb. fresh spinach

1/2c. sliced green onion

Dash of freshly ground pepper

5 slices bacon, diced

2T. wine vinegar

1T. lemon juice

1tsp. sugar

1/2tsp. salt

1 hard-cooked egg, coarsely chopped

Directions:
Directions:
Wash spinach thoroughly, discarding stems.
Pat dry on paper towels.
Tear into bowl.

Add onion and sprinkle with pepper.
Chill.

At serving time;
Slowly fry bacon in a skillet until crisp.
Add vinegar, lemon juice, sugar and salt.

Turn off heat and gradually add spinach, tossing just until leaves are coated and wilted. Sprinkle with egg.

Toss just before serving.
