8 c flour
2 Tbl yeast
2 Tbl salt
1/4 c sugar
6 c liquid (potato water,water, or milk)
1/2 to 1c potato flakes( optional if you don't use potato water)

Directions:
In large mixing bowl: add 6 c flour, salt, yeast, sugar, and potato flakes. Stir; heat liquid to 115 degrees. Add to dry ingredients, stir. Add enough remaining flour 1 c at a time to to make mixture sticky/dry enough to continue kneading as it forms a ball. The trick is not to add more flour than needed. The dough would get tough. Knead by hand for 5 min. However, if Linda has other things to do she'll need for 1-2 min. and that's it! Let rise covered with towel in the bowl that is greased till double in bulk. Punch down, let rise again. Punch down and shape into rolls. Let rise again and then bake. 350 degrees for 15- 20 min. Remove from oven and grease with oil or butter. and turn out to cool.

Linda makes great rolls from this recipe. No mixer needed. She says she can put in refer if she needs to leave and come back and punch down and lt'll rise again. Everyone loves her rolls around these parts!!
