2 1/4 c. flour
1 tbsp. baking powder
2/3 c. sugar
3/4 c. milk
1/2 c. butter, melted
1 egg
1 tsp. vanilla
2 c. chopped cranberries
(1/2 c. pecans, optional)
TOPPING:
1 c. flour
1/4 c. sugar
1/4 c. butter
Directions:
Directions:
In large bowl combine dry ingredients. In medium bowl stir together butter, milk, egg and vanilla. Stir into dry ingredients just until moistened. Fold in cranberries. Spread in greased and floured 9" round cake pan or a 9X13 cake pan (depending on thickness you want). Mix topping and sprinkle on top. Bake 35-45 minutes at 400º.

Instead of the crumble topping, you can also drizzle a glaze on top. When the cake is done, take it out of the pan. Mix 1/2 c. powdered sugar w/ 2-3 tbsp. milk. Drizzle over cake.
