3 tblp olive oil
* salt and pepper to taste
1 gallon of beef broth
16 oz of tomato sauce
1 lb chopped carrots
1 large chopped onion
3 large beef shanks
2 cups barley
* add stock as needed

Directions:
Directions:
1. In large stock pot heat oil and brown beef shanks with salt and pepper to taste on both sides (med heat) about 3 min each side.

2. Add gal of beef broth and tomato sauce cover and simmer on low until meat is tender about 2 hours.

3. Remove meat place on cutting board, chop meat away from bone and into small pieces and then place into pot.

4. Add carrots an onions simmer for one hour or until barley is tender. taste to re-season
