"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

8 slices of bread
2 eggs
1/4 C milk or cream
2 TBSP honey
1/4 tsp salt
1/4 tsp ground cinnamon
1/2 tsp vanilla extract
3 TBSP butter

Directions:
In a medium bowl, beat together eggs, milk, honey, salt, cinnamon, and vanilla extract.

In a griddle or frying pan, melt the butter over medium-low heat.

Dip both sides of the bread in the egg mixture and carefully transfer to the hot griddle. Brown on both sides and transfer to a warm plate while remaining slices cook. Serve hot.

***NOTE: the lower the cooking temp the better (just takes longer!) so that the honey does not burn.
