Ingredients:  
6 small ripe tomatoes, chopped
1 to 2 jalapeño peppers, seeded and minced, or 1 can chopped jalapeño, and 1 can roasted green peppers to taste.
2 Tbl finely chopped red onion
2 Tbl finely chopped fresh cilantro (More if you like the flavor of the cilantro, I use a lot!)
1/3 cup Fresh lime juice
2 teas. Red wine vinegar
Salt and pepper to taste.

Combine all ingredients and refrigerate for several hours (if you can wait) to improve and combine the flavors. Makes 1 to 1 ½ cups.
