Hamburger Stew (Camper's stew) Recipe

1 to 2 lbs burger
3 to 4 Potatoes peeled and diced
2 to 3 Carrots scraped and sliced
2 stocks of celery sliced (or more, I like more celery flavor)
1 large onion
2 to 3 cloves Garlic, crushed then chopped (releases more of the oil and makes it more flavorful)
Salt and pepper to taste. (Since you use commercial soup in this recipe, watch the salt. I don’t add any until after I add the soup.)
Optional herbs you can use are, thyme, marjoram, parsley, and celery seed (Not salt). Add to your taste.
1 can cream of Mushroom Soup (if you make a larger stew, you may need to add a second can of soup. I use cream of celery for the second can)

Brown the burger with the garlic. Cover with water (you can use a beef broth for added flavor) and add the potatoes, carrots, celery, and onion. (If you chop the vegetables small, this stew will cook up fast and make a very quick meal) Cook the vegetables until tender. Add the cans of soup (this makes the gravy for the stew) and stir until well mixed.

For biscuit Crust- make your favorite recipe, roll out about 1 inch thick. Put the biscuit top on and bake in a hot oven until the biscuits are done. Serve immediately. (This crust will absorb more liquid, so you may want to add a little more water to your stew before placing the crust.)

For Dumplings – Make your favorite recipe, drop about a ¼ cup size ball into hot boiling stew. Cook 10 minutes uncovered, and then cook 10 minutes more, tightly covered. (Don’t let hungry kids or husbands lift the lid before the 10 minutes are up, or your dumplings will not be cooked right. They will be soggy, not fluffy)

You can put a biscuit crust on top or you can make this stew with dumplings. I use a biscuit top if I have an oven I can use. But, if you make this stew while you are out camping, the dumplings are the best. Both of my favorite recipes to use with this stew are in the Bread section of the cookbook
