Ingredients: 6 cloves garlic, minced 1/3 cup olive oil 1/4 cup chopped flat-leaf parsley 3 TBS grainy mustard 2 TBS minced fresh thyme 2 TBS minced fresh rosemary 2 tsp kosher salt 1 tsp crushed fennel seeds 1/2 tsp pepper 2 flank steaks (about 2 lbs. each) trimmed

Directions:In a small bowl combine first nine ingredients. Smear both sides of steak with garlic mixture. Cover with plastic wrap and refrigerate overnight. Let steak come to room temperature before grilling. Prepare a charcoal grill with medium hot coals, heat a gas grill to medium high or heat broiler. Position grill rack or broiler rack 5 inches from heat source. Grill or broil steak 9-11 minutes for medium rare (11-13 for medium) turning once. Let steak sit for 5 minutes before slicing. |
