2 lbs Red potatoes
1/3 C Olive Oil
1 pkg. dry Onion soup mix

Directions:
Directions:
Preheat oven to 425.

Scrub the potatoes & cut into small cubes – about 1 inch. Put into a 9x13 baking dish & pour oil over them. Sprinkle the soup mix over that & mix until well coated.

Bake about 30 minutes, stirring once or twice during cooking.
