1/2 lb. Alfonso Black olives
1/2 lb. Greek green olives
1/2 c. chopped celery
1 tsp. oregano, 1 garlic clove crushed
1 med. sweet onion/purple onion
3 T. wine vinegar, 3 T. olive oil

Directions:
Directions:
Mash green olives just to split leaving seed attached to some of the olives. Leave black olives whole. Place in bowl, add all ingredients listed above, stir to mix. Cover and refrigerate. Best to prepare a day or two before serving so olives can marinate in mixture. may be kept refrigerated for quite a few days.

Serve as an appetizer or with meal. Great with Cuban bread. Bona appetite!
