2 c. all purpose flour
1 c. brown sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp, nutmeg
1/8 tsp. ginger or cloves
1 c. canned pumpkin
1/2 c. milk
2 eggs
1/3 c. shortening
1/2 c. chopped walnuts
1/2 c. raisins

Combine 1 c. flour and all other dry ingredients. Add pumpkin, milk, eggs and shortening. Beat with mixer on low speed till blended, then on high speed 2 minutes. Add remaining flour. Beat well. Stir in nuts or raisins, if desired. Pour batter into greased loaf pan. Bake at 350 for 60 to 65 minutes. Cool 10 minutes on wire rack. Remove from pan. Cool thoroughly. Wrap and store overnight before slicing.
