3/4 c. shortening or butter
3/4 c. granulated sugar
1 egg
1/2 tsp. vanilla
2 mashed bananas
1/4 tsp. salt
1 tsp. baking soda
2 c. flour
Frosting:
6 T. brown sugar
4 T. butter
4 T. cream or milk
powdered sugar
1/2 tsp. vanilla

Directions:
Directions:
Cream together shortening and sugar. Add egg, vanilla, bananas and blend. Mix in flour, salt and baking soda. Drop by teasponful on greased baking sheet. Bake 350º for eight minutes or until brown on edges.
Frosting: In a saucepan scald milk, add butter and brown sugar, and bring to a boil. Stir fast and heat slowly so you don't get chunks. Add enough powdered sugar to make spreadable, and add vanilla. If it gets too thick, add hot water.

I didn't think I would like these at first, but they are actually really good. My family loves them. It is a good way to get rid of over ripe bananas.
