6-10 Double thick lamb chops - bone-in
2 cups extra virgin olive oil
2 cups lemon juice
2 Tbsp garlic powder
4-6 cloves fresh garlic-minced
1 Tbsp onion powder
1 Tbsp oregano
2 Tbsp rosemary
pepper to taste

Lay out lamb chops and tenderize using a fork. Put in shallow baking pan. Combine all ingredients and pour over the chops. Marinate 4-6 hours (minimum) turning occasionally. Cook on barbeque grill on high heat for 1-2 minutes to sear, then turn heat to medium. Cook 4 minutes per side for medium rare.

Serve with mint jelly. Be sure to stay with the chops as they cook because they can flare up because of the marinade. Hot dinner rolls are a great compliment to these chops. Wonderful! Big thanks to Pam Boosalis for sharing this recipe with our family!
