4 eggs
1 1/2 c. granulated sugar
2 1/2 c. flour
2 tsp. salt
2 tsp. baking soda
1 1/2 c. quick oats
1 - 20 oz. can crushed pineapple with juice
10 oz. flaked coconut

Directions:
Directions:
Combine eggs and sugar. Beat until light (about 2 minutes). Sift together flour, salt and soda. Add to egg mixture and blend until smooth (about 2 minutes longer). Add remaining ingredients and mix very well. Spoon into greased and floured muffin tins. Bake at 325º for 30 minutes. Remove from pan immediately.
