3 medium sweet potatoes
3 eggs
1 stick butter
1+ c sugar
spices to taste

I was told how to make sweet potato pie by a woman without a recipe but I will attempt to convey what she taught me.

Boil 3 medium sized sweet potatoes until done. Peel and place warm sweet potatoes in a bowl. Use a mixer to soften, add 3 eggs, 1 stick of butter and sugar to taste (1 to 1½ cups generally). Mix thoroughly, remove beaters and clean strings from beaters a couple times. Add spices to taste. I use cinammon, nutmeg and pumpkin pie spice. Sample raw mixture, it should taste sweeter than you want the baked pie to taste. The sweetness and moisture content of the sweet potatoes will determine the amount of sugar and if mixture is too thick, add small amount of milk. Pour mixture into unbaked piecrust and bake at 400 degrees until done - approximately one hour.
