Crust:
1 c. orzo noodles, cooked and drained (3 c. cooked)
1/3 c. of a good quality red pasta sauce
2 eggs
1/3 c. grated parmesan

Filling:
1 10-oz. pkg. frozen chopped spinach, cooked and drained
1/2 c. ricotta cheese
1/8 t. nutmeg
1/2 c. grated Monterey Jack cheese
Directions:
Directions:
Mix crust ingredients and press into pie plate. Mix filling
ingredients and press into crust. Top with more pasta sauce,
grated cheese, and a small sliced tomato. Bake at 350º for 30
minutes.
