1 head or 2- 10 ounce packages cauliflower
2 cups chicken stock
1/2 cup chopped onion
1/4 cup butter
1/2 cup flour
2 cups shredded cheddar cheese
2 cups milk
1/8 teaspoon nutmeg

Directions:
Directions:
Cook cauliflower (cut up) in chicken stock. Remove 1 cup of cauliflower and set aside. Drain the rest, keeping the stock. Mash remaining cauliflower. In large pan cook the onion in the butter until tender. Add in the flour and stir and then slowly add in the stock drained from cooking the cauliflower. Cook and stir until thick. Stir in cauliflower (all) and cheese. Cook until cheese melts, add milk and nutmeg.
