Whole chicken, 3 - 4 lbs. Skinned
1 onion, cut into 1-inch wedges
2 small sweet potatoes, cut into cubes
2 tbsp olive oil
1 tsp kosher salt
1/4 tsp black pepper
1/2 tsp rosemary, chopped finely or dried
1/4 cup maple syrup (best quality available)
6 sprigs fresh thyme

Heat oven to 400ºF. Arrange the chicken, onion, and sweet potatoes in a 9-by-13 inch baking dish. Drizzle the oil over the chicken and vegetables and season with the salt and pepper. Toss to coat. Drizzle with 1/2 the maple syrup and top with the sprigs of thyme. Roast, stirring the vegetables once, until the chicken is cooked through, about 1 hour and 15 minutes. Add the remaining maple syrup to the chicken as it cooks.
