1 head of lettuce or mix of good greens
2 Tablespoons soft butter
1 cup chopped corned beef
1 cup sweet sauerkraut, drained
1 cup cubed swiss cheese
3/4 cup 1000 Island Dressing
1/2 teaspoon caraway seeds
Croûtons from rye or pumpernickel bread

Buy the kind of corned beef that you would for a sandwich.

To make your own croûtons: Spread both sides of pumpernickel bread with butter and cut in 1/2 inch cubes. Bake at 300 degrees for 20 minutes.
