1/4 c olive oil
salt and pepper
4-5 lbs. boneless, skinless chicken breasts, cut into 1/2 inch pieces.
1/2 c flour
2 onions chopped
2 green peppers, chopped
4 cloves garlic, minced
1 large jalapeņo pepper, finely chopped
2 14oz cans of diced tomatoes
3/4 t ground cumin
1 1/2 t dried oregano

Directions:
In a large skillet, heat 2 T oil on medium-high heat. Season chicken with salt and pepper. Coat chicken pieces in flour an shake off ala excess flour. Cook chicken in batches until browned, adding more oil as necessary. Remove and drain. Saute onions, green pepper, garlic, and jalapeņo until slightly cooked. Add all ingredients to a crock pot and mix up. Cook on low for 6-8 hours or on high for 3-4 hours. Serve with tortillas.
