6 T butter (3/4 stick)
2T minced shallots
3 c thinly sliced mushrooms 3/4 c dry white wine
1 c heavy cream
4 boneless chicken breasts 1 garlic clove minced
2 T fresh lemon juice
3/4 c chicken broth

Directions:
Directions:
Melt 4 T butter in heavy skillet over medium high heat. Add chicken breasts, sprinkle with salt and pepper and saute for 3.5 minutes on each side. Set aside. Reduce heat to medium and melt remaining butter. Add shallots and garlic, cook until tender but not browned. Add mushrooms, lemon juice and white pepper to taste. Continue cooking until the mushroom liquid has almost completely evaporated. Add the wine and chicken stock continue cooking until the liquid has almost evaporated. Reduce heat to medium low, stir in the cream and cook, uncovered, until the sauce begins to thicken. Return breasts to sauce to heat through. Serve chicken with sauce. Serves 4
