8 Plum tomatoes, seeded & diced
2 tsp. Minced Garlic
6 oz. Mozzarella Cheese. diced
2 tbsp. fresh basil, chopped
1 tbsp. fresh parsley, chopped
1 tsp. fresh chives (optional)
1/2 tsp. lemon juice
1/3 cup Extra Virgin olive oil
1/2 tsp. Italian seasonings
1/4 tsp. Garlic powder
1/4 tsp. pepper
1/4 tsp. salt

It is best served with old London brand toasts or you can make your own toast slices & rub with garlic.
