1 pkg extra firm tofu; slice into 3rds like bread slices then cube
2 T olive oil
2 T soy sauce
2 T sesame seeds


1 T peanut oil
½ c finely chopped celery
1 can water chestnuts, chopped
1 clove garlic, minced
1 t finely chopped fresh ginger
1 T hoisin sauce (can be omitted, or Braggs can be used)
1 T soy sauce
1 T rice wine vinegar
8 large Boston lettuce leaves
Toasted chopped peanuts

Directions:
Directions:
Combine Tofu, Olive Oil, Soy Sauce, and Sesame Seeds (Can also add some Almonds) and fry up like chicken; turning every so often.

Heat the oil in a wok or large nonstick skillet and stir fry celery, water chestnuts, garlic, and ginger until tender-crisp. Add the tofu to veggies Heat for 1 min. Divide mixture amongst the leaves and Garnish with the peanuts.

Serve with Cooked Brown Rice.
